Each group will be asked if they prefer hot or cold udon, and whether they want large or small sizes. You will need to specify the number of each. Payment is made in advance at the grocery store next door, where you can also purchase toppings.Located in a residential area of Mitoyo City, this udon shop is said to be one of the best in Japan. It has been five years since my last visit. Upon arrival, I took a number ticket and was number 19, indicating about 40 people ahead of me on a weekday, just 10 minutes before opening.When the time comes, customers are called in order of their tickets. The menu offers four options: hot or cold udon, and large or small sizes. While waiting, the staff will take your order. Once it’s your turn, you can pick up your udon.After receiving my order, I headed to the condiments area to add my preferred toppings, which include green onions, ginger, raw eggs, onsen tamago (hot spring eggs), and broth. Note that raw eggs and onsen tamago come at an additional cost. Next, I entered the grocery store next door, where tempura is available for topping. After that, I proceeded to the cashier. The payment system has changed from post-pay to pre-pay.After paying, there is an eat-in area across the street where you can enjoy your meal. This area has been nicely maintained, unlike before. Additionally, broth is available here, so you can adjust the flavor if needed.This time, I ordered:- **Hot Large Udon (JPY 500)** - Topping: Raw Egg (JPY 60)The udon has a chewy texture with an incredible firmness, even when served hot. The delightful bounce of the noodles is enjoyable. Mixing in the raw egg elevates the dish to another level. It truly is delicious udon.- **Cold Large Udon (JPY 500)** - Topping: Chicken Tempura (JPY 150)First, the udon. The noodles are shiny and have a distinct edge. The firmness is exceptionally strong when served cold. I’ve tried various udon, but this level of firmness is rare. The texture is smooth, and the noodles are genuinely delicious. The dipping sauce has a sweet umami flavor that is rich without being overly salty. The chicken tempura topping is juicy and substantial.After a long gap since my last visit, many things have changed. Prices have increased slightly, and there are now more affordable options at other famous Sanuki udon shops. However, the udon here remains top-notch. The noodles are simply delicious. Although it’s a bit out of the way and the hours are limited, this is definitely a place to include in a Sanuki udon tour.
