It took over an hour by car from downtown Kyoto to get here.The focus here is on the sharpness of the knives, or KIREAJI. This place specializes in using a variety of knives to achieve perfect cuts, resulting in textures that you won’t find anywhere else.This restaurant has taught me the importance of cutting like no other.
