Starting with the tender octopus simmer, the technical skill displayed in the preparation of the squid, and the refined atmosphere of this renowned establishment were all quite pleasant.However, perhaps due to the timing of my visit, I found that the sushi lacked the distinct textures and flavors of the various fish. I couldn't sense the vitality and strength that natural fish typically possess.Additionally, I believe the seasonality played a role here as well; the rice had a strong acidity and was tightly packed, which weakened the harmony between the fish and the rice. It felt less like enjoying sushi and more like placing prepared fish atop the rice.Given the relatively high price, I hoped for a bit more effort in providing better quality fish. That said, the sweet shrimp, squid, and sea urchin were delicious.
