This Japanese restaurant is located in a mixed-use building on the Midtown side of Roppongi. Rather than traditional Japanese cuisine, it primarily focuses on duck and soba dishes. From the appetizers, you can enjoy a parade of duck sashimi and broth, and in the later courses, various parts of duck prepared with Tamahagane (Japanese steel) are served. The rich texture of the soba-yu (soba water) at the end was indeed as the chef described—unlike anything else, and I left feeling completely satisfied.
