There are several famous Japanese restaurants run by disciples of Honkotsuki, but this one is my favorite among them.First of all, the exterior and interior ambiance of the restaurant are simply wonderful.The dishes showcase the chef's exceptional taste, making it one of the few Japanese restaurants I genuinely want to revisit!Overall, the flavors are gentle yet distinct, highlighting the quality of the ingredients in a clear and delicious way.Personally, I found the comparison of ayu from Shimane and Shiga, as well as the eel and winter melon soup, particularly impressive.This restaurant strikes a great balance in terms of presentation, service, hospitality, portion sizes, and pricing.The starting times are a bit unusual, though!
