This Japanese restaurant is ranked number one in Hiroshima on Tabelog. I appreciate how easy it is to make a reservation. The chef's stories about his dedication to dashi, water, and fish are quite entertaining. He changes the combination of kombu and water for each dish, and I was amazed by the depth of flavor every time. The fish may not be high-end, but the effort put into making it delicious was truly impressive. I definitely want to visit again when I'm in Hiroshima.
