The thickness was impressive, and encountering such a level of outside skirt is rare! Despite its thickness, the way it was cut was perfect, and the aroma when placed over the charcoal grill was irresistible.The standout dish was the incredibly fresh liver. Its freshness was so remarkable that it had a firm texture, and it paired perfectly with sesame oil, exceeding my expectations from the very first bite.The selection of horumon was also quite impressive. The colon and mountain chain tripe showcased a distinct sweetness from the fat, and the careful preparation ensured there were no unpleasant flavors. Each bite released a burst of umami. The pink color clearly indicated its freshness!Additionally, they offered a variety of dishes, including fresh omasum sashimi and crunchy options, which made the menu even more delightful. To finish, I enjoyed cold noodles and beef tendon curry. Whether you want a refreshing end or to savor the lingering taste of meat, both options were excellent.
