He offers sushi that expresses the "local flavor of Niigata" by utilizing local fish, rice, salt, vinegar, soy sauce, and vegetables. It has been recognized with the Tabelog Award 2026 Silver and selected as one of the Top 100 Sushi Restaurants in the EAST for 2025.Rather than being a place that simply replicates Tokyo's Edomae sushi in Niigata, this restaurant strongly emphasizes the significance of enjoying sushi in Niigata. The owner personally selects local fish and combines them with ingredients like tuna, kohada (young gizzard shad), and shellfish that may not be available locally.
