Reservations can be made through Table Check, with slots opening on the 10th of each month at 10 PM for the following month. Lunch is limited to 60 minutes, while dinner is 90 minutes.This time, I ordered the "Chiba Prefecture SPF Loin Cutlet Set Meal" along with an additional "Ebisu Mochi Pork Half Tenderloin" and "Homemade Juicy Minced Cutlet."First, I tried the SPF loin. The beautifully fried coating was light and crispy, and the texture was surprisingly delicate. The meat was tender, with a rich sweetness from the high-quality fat. The fat was not greasy, leaving a light aftertaste.The Ebisu Mochi Pork tenderloin was moist and tender, with impressively fine fibers. The flavor of the lean meat expanded with each bite.The homemade juicy minced cutlet burst with meat juices the moment I took a bite, and it was incredibly soft and unlike any minced cutlet I had ever tasted before.The tonkatsu was enjoyed with a blend of three types of salt, a special mustard sauce passed down from Kushikatsu Abon, and a sharp tonkatsu sauce. Each of these enhanced the meat's flavor.In addition to the high-quality pork from various brands, the restaurant meticulously designs its unique blend of oil, breadcrumbs, dusting flour, and egg wash.Although served in a set meal style, the rice is carefully selected by a five-star rice meister, who chooses the best varieties and regions based on the season.The miso soup uses a mixed dashi primarily made from dried sardines and features miso from Komechuu, established in 1820.The dressing for the cabbage is a homemade carrot dressing that is adjusted based on the seasonal condition of the vegetables, emphasizing freshness.Every detail is carefully considered, with no compromises in any aspect. The warm and pleasant service adds to the comfortable atmosphere, making it a popular spot where you can enjoy your meal in peace.While making a reservation can be challenging, it is definitely worth the effort. I felt this is a representative gem of Osaka.It was delicious.It was a great meal!
