"Every seat offers a premium view." The perfect theater-style layout allows you to enjoy the chefs' performance from the best seats in the house.▼ Thoughtfully Designed Waiting Room ♡ 1. A space that enhances anticipation for the meal while experiencing the four seasons of Japan through all five senses. The dining area is bright and white, creating a festive atmosphere suitable for special occasions, while the waiting room features dim lighting and candles, resembling a calming hotel lounge. Natural scents, uniquely blended for each space, fill the air.2. Art by female artist Kumiko Tamura, showcasing the life of summer flowers (sunflowers). The artwork captures the beauty of a sunflower's life cycle, conveying the message that every moment holds its own beauty, rather than just focusing on the peak bloom. Tamura's work reflects the desire to deliver the maximum charm of the restaurant, no matter when you visit. The space is adorned with sunflower-themed cushions and flowers from Flowers Fête. (You can enjoy the summer ambiance until around October.)▼ Welcome Drink This time, we enjoyed an original tea blended with Japanese black tea, red shiso, and herbs, evoking a refreshing sensation. Decorated with blue maple leaves, it embodies a cool Japanese aesthetic. With relaxing effects similar to aromatherapy and benefits for digestion, it prepares you for the upcoming course.【Atmosphere Inside the Restaurant】 The marble counter, shaped like a curve, allows diners to experience the chef's table ambiance from any seat, fostering natural eye contact and conversation among guests. The impressive projection mapping is beautifully enhanced by round Arita-yaki art pieces arranged in a checkerboard pattern. The visuals change intricately to match the dishes, creating an immersive experience akin to stepping into a live venue. The projections are not overly extravagant; instead, they serve as a story-telling art piece that complements the dishes and the seasonal motifs. The lighting is intentionally irregular, casting gentle shadows and radiating soft light in multiple directions. The back shelf features art dyed in the restaurant's key colors of yellow and white, using Saga's famous Nao washi paper, blending elegantly into the space."The entire atmosphere felt like a feast, with a world meticulously crafted in every direction, filling my heart with joy." 【Lunch Course】 - Edamame from Yoneda Farm | Consommé | Water Shield | Winter Melon | Purple Shiso Flower - Hoshitsubu Corn from Yamamoto Farm | Polenta | Black Truffle - Hokkaido Octopus | Sand Dolce | Fennel | Okra | Sea Grapes - Kyoto Pike Conger | Pumpkins | Golden Thread Melon | Mitsuba | Dukkah - Hyogo Akou | Celery Root | Girolle Uwabami-so | Coconut - Unis Soba | Sudachi | Eggplant | Whelk | Mint - Ibaraki Hitachi Beef | Oura Burdock | Green Peppercorn - Tomato Risotto - Kanagawa Yagishita Farm Blueberries | Chroimoji Finger Lime - Miyazaki Masahiro Mango | Hanneri Banana Passion Fruit | Coffee Beans - Petit Fours | Petit Four "The beauty of the dishes deepens with the carefully chosen tableware reflecting the seasons..." Take your time to enjoy the changing lighting and presentation of each dish, along with the beauty of the tableware. The sounds and aromas from the kitchen instantly captivated me as a food lover. Two and a half hours felt incredibly rich, barely enough to savor everything. In terms of life experiences, I can count on one hand the number of times I've felt such joy and inspiration.▶ For Corn Lovers, the Ultimate Indulgence Melt-in-your-mouth "Cream Croquette" Boiled in corn broth, with a rich "100% Corn Cream" that retains some kernels. The entire coating is made from corn. Topped with freshly fried cream croquettes and a generous shaving of black truffle, it brings an extra layer of luxury. Inside, there's grilled corn finished with soy sauce, creating a moment of fragrant delight as you take a bite. Each bite brings a new expression of flavor, naturally bringing a smile to your face.▶ A Beautiful Bouquet: Bouquet Salad A signature dish celebrating seasonal ingredients. Presented in a special dish as if receiving a bouquet from Unis, this warm salad is rich in sensory appeal. The sweetness of the steamed pike conger and pumpkin is balanced by the refreshing flavors of grain mustard and mitsuba, while the finishing spice of dukkah leaves an exotic aftertaste. The meticulously layered flavors and stunning visuals strongly reflect Chef Kurakawa's world view, making it an unforgettable dish.▶ Classic Tomato Risotto The classic tomato risotto, not listed on the menu, allows you to choose the portion based on your appetite. This risotto is made without cheese or butter, layering the umami of the ingredients. The rice is cooked in a broth rich in flavors from both sea and mountain, and the roasted tomatoes are mixed in as you eat, creating a truly delicious experience. The subtle aroma of seasonal citrus adds a lovely accent...Sweetness, acidity, and a hint of bitterness. A dessert that resonates with perfect harmony. What appeared before me was an astonishingly rich and sweet "Mango with a Sugar Content of 17 Degrees." Accompanied by the gentle richness of Hanneri Banana Crème Brûlée and the sweet-sour passion fruit. What impressed me the most was the combination with coffee gelato. The bitter depth of the coffee beautifully balances the sweetness of the fruit and the richness of the brûlée, creating a stunning harmony. Tominaga-san is a genius.▶ A Memorable Moment of the Day. As the glass fogged up over time, I noticed the sommelier, Taito-san, elegantly wiping it clean. It was impressive how he fulfilled unrequested desires, a little wish ahead of time... This thoughtful gesture was truly wonderful.Once I took a bite, I wanted to share the flavor with someone, but inevitably, someone would catch my eye and come over to chat. The team at Unis was genuinely kind.【In Conclusion...】 To Taito-san, Chef Kurakawa, Tominaga-san, and everyone else. Thank you for allowing me to experience the world of Unis for the first time, making it a day filled with happiness for me. I will never forget this feeling.I look forward to the next chapter of Unis.
