As you descend the spacious and beautiful staircase leading underground, you are greeted by the stylish "Ryuzu" logo. Upon entering, the high ceilings create an open and airy atmosphere, revealing a clean and lovely space despite being below ground.Each dish is meticulously crafted, incredibly delicate, and utterly delicious without any heaviness. The skill of the chef is evident. The shiitake tart was the best shiitake dish I've ever had, and the sweetfish dish was also the finest I've experienced. These two plates were truly exceptional and left a strong impression on me.The avant-dessert, featuring lychee and berry granita, along with the post-meal sweets, were delightful as well.The special cups used for the tea, made by a company from Niigata, also conveyed a sense of local pride and left a positive impression. The chef's affection for his hometown and the producers, as well as his careful attention to seasonal ingredients, was clearly communicated. It's also a nice touch that mineral water from Niigata is provided for free at such a high-caliber restaurant.The service was very attentive, with staff treating solo guests at the counter with care, and the chef's farewell at the end was a nice touch.I highly recommend this place for those looking to enjoy delicate French cuisine in a quiet and refined setting. With its overall excellence, it’s perfect for important dates, anniversaries, or business meetings that you definitely don’t want to miss. I had a wonderfully pleasant time.
