One of the Top 5 Soba Restaurants in JapanI’ve been exploring soba for about 2-3 years now. I’ve visited several incredibly delicious places across the country, but I believe this restaurant and "Fujioka" are truly in a league of their own.Soba is quite delicate, so it doesn’t have an overwhelming flavor or a taste that hits you hard. Instead, it’s all about comparing the pure taste of the soba, the flavor of the dipping sauce, and the balance when they come together. At Yama no Mi, everything is simply perfect. The way they prepare the soba is top-notch, resulting in a delicate yet supple noodle with a wonderful aroma. The texture and flavor are absolutely flawless.Even with just salt, it never gets boring. But when you dip it in the sauce, it evolves even further. That’s the kind of soba they serve here. The condiments are also of a high standard, with no shortcuts taken.The soba broth has an intensely roasted flavor, reminiscent of soba tea, and they even offer additional condiments to enhance it. The soba broth itself is evolving here at Yama no Mi.The pizza this time was a hit as well. The Sukagawa Soba Pizza was delicious, infused with the fragrance of sansho and miso. And looking back, the appetizers were outstanding too. The winter melon was incredibly tasty.If you’re serious about soba, this place is a must-visit. Even if you’re not, I still highly recommend it.(I’ve been exploring various food genres, so I gauge the level of each dish based on its taste.)
