I visited MAZ after hearing the news that the head chef has changed to a Japanese chef since my last visit.During my previous visit, the menu featured many innovative shapes and colors, giving a very Peruvian feel. However, with the Japanese chef, it seems to have found a deeper meaning in the context of Japan. For example, the oyster chawanmushi is a completely Japanese dish, yet it fits perfectly within this space and the structure of the course. The combination of Peruvian cooking techniques and Japanese ingredients, especially the umami, opens up a new world of flavors. The harmony between the tableware, the tablecloth, and the vision of MAZ, along with the new chef's skills, seems to elevate the significance of MAZ as a restaurant located in Japan, while still embracing the essence of Latin America. The high quality of each dish is evident, but this place is truly about fully enjoying the experience with all five senses. Even with the new chef, that experience remains, and I found it to be a fun and stimulating restaurant.
