A reservation at this hard-to-book restaurant was made possible thanks to a regular customer. They maintain a perfect balance.The Burrata & Setoka is an exceptional pairing, with the rich creaminess of the burrata cheese perfectly matching the acidity and sweetness of the Setoka.The signature Chilled Uni Cappellini features an incredibly delicious pesto that might just be the best I’ve ever had. The creaminess of the uni softens the punch of the basil.The Florentine-style Salted Offal Stew was also exquisite. The offal was tender and flavorful, and I ended up drinking every last drop of the broth.The Lemon Garlic Butter Cheese pasta stood out with its sharp garlic flavor, while the aroma and richness of the butter and cheese were perfectly balanced by the acidity of the lemon.The Sakura Shrimp Arrabbiata had a spicy kick from the ‘nduja. It was my first time trying ‘nduja, and I found it to be addictively delicious. I doubt there’s another arrabbiata quite like this one, with the concentrated flavors of sakura shrimp and pork making it irresistible, even when I was full.Interestingly, even though I ordered wine by the bottle and not as pairings, each wine perfectly complemented the dishes I was enjoying. I opened about four bottles, including sparkling wine, and they all matched wonderfully—amazing!!It’s incredible that Chef Yoshida manages all of this by himself. He looked quite tired with bruises from cupping, but I hope he continues to do his best… Although it’s hard to get a reservation, I definitely want to return!
