I was lucky enough to secure a reservation again, so I returned for another visit.The performance of opening the traditional rice cooker right in front of me and showcasing the freshly made sushi rice was just as captivating as before. The explanations about the ingredients and fish were thorough, and I could feel the dedication in each piece.However, this time the rice was slightly different from my preference. Compared to my last visit, the vinegar flavor was more subdued, and the rice felt a bit too moist and soft. Given the impressive experience of the firm sushi rice during my first visit, I found this time a little lacking.That said, this is just a matter of personal taste. The quality of the fish and the meticulousness of the preparation remain outstanding, and I find myself wanting to encounter that "incredible piece" again. It was a great meal!
