The dining style allows you to enjoy your meal while observing the chef's meticulous techniques across the counter, creating a special yet relaxed atmosphere.The cuisine centers around seasonal ingredients, showcasing a thoughtful twist in each dish. Starting with an appetizer featuring sea urchin, the meal progresses through sashimi, a soup dish, and grilled items, each plate presenting a rich variety of expressions, including the tableware. Many dishes highlight the ingredients themselves, with subtle seasoning that enhances the umami, aroma, and texture without overwhelming them.A standout was the roll made with generous amounts of tuna. The rich flavor of the tuna was perfectly balanced by the crunchy, salty notes of the yellow pickles, making it a dish that exceeded its visual impact.The grilled fish had a beautifully crisp skin and tender flesh.
