I managed to secure a reservation amidst the competition and booked the omakase course in advance.We started with the tenderloin.Perfectly cooked to my liking—delicious.The minced meat was fluffy and tasty.Next was the chicken breast, which I forgot to photograph; it was light and felt weightless—so good.Finally, we had two types of loin:One from Niigata, which had a yogurt-like flavor, and the other from Okinawa, which tasted like pineapple.Both had sweet fat, and the Niigata cut had a firm texture.As noted in the restaurant, the batter is distinctive.It has a nice sweetness and a satisfying crunch.All the dressings and sauces were delicious.Next time, I’d like to add the tenderloin with either minced meat or chicken breast.
