This was my third visit after about a year and a half. Since it was my companion's birthday, I asked where they wanted to go, and they insisted on visiting this restaurant. I made a reservation through their dedicated online booking system, which provided a reassuring feature to note how many times I had visited to avoid overlapping dishes.The course I reserved was the "Chef's Omakase Premium Course," paired with a "Wine Pairing" that complemented each dish. The menu was simply listed with the ingredients, and the dishes were as follows:(Dishes)* Amuse-bouche* Spinach with Ikura* White Asparagus with Echizen Crab* Lobster with Morel Mushrooms* Ezo Abalone* Sea Bream with Couscous* Wagyu Fillet with Sansho* White Strawberry* CoffeeEach dish was a testament to the meticulous effort put into its preparation, showcasing the highest quality in both presentation and flavor, leaving a lasting impression. The spinach and ikura chawanmushi-style dish was particularly moving, with layers of umami and the delightful texture of the ikura. Another dish featured thinly sliced onions wrapped around Echizen crab, perfectly capturing the texture of the onions and the rich flavor of the crab. From the lobster to the wagyu fillet, every ingredient and the exquisite sauces were unparalleled. Even the dessert and coffee plate felt like tasting art with every bite.For this special occasion, I requested a cat illustration on the dessert plate, and they graciously accommodated this detail, making for a truly memorable experience. I look forward to my next visit!
