A Must-See: "l'algorithme"I made a reservation at the French restaurant "l'algorithme" in Shirokane for lunch. Even though it was a weekday, the place was fully booked.Chef Hiroki Fukaya, who previously served as sous-chef at "Quintessence," opened his own restaurant in 2017. It has since been recognized with the Tabelog Award 2026 Bronze and selected as one of the top 100 French restaurants in Tokyo for 2025.To celebrate its 10th anniversary in September 2026, they are offering a special anniversary course featuring popular dishes from the past. This course is available at the same price as the regular lunch, JPY 9,900.The meal starts with the "Algo Tart," a signature dish that has been served since the restaurant opened. It features a foie gras terrine paired with apple, cocoa butter, and cinnamon cookies, and it is quite substantial.Next is grilled eggplant served with a mascarpone foam, squid, and consomme jelly. The eggplant flavor is rich, and the combination of tastes is deliciously complex. The wine pairing enhances the experience even further.Following that, we had a large anago (conger eel) weighing about 500g, prepared as a beignet with egg yolk, beets, herbs, and cashew nut oil. The grilled unagi (eel) that followed had an incredibly crispy skin and a firm texture, complemented by a blackberry sauce with a hint of yuzu. The main dish featured Hokkaido Ezo deer, which had no gamey taste at all, just a wonderful flavor. It was served with a red wine and porcini sauce, beautifully cooked to highlight the essence of autumn. For dessert, we enjoyed a rich caramel cream made with premium eggs, followed by macarons and herbal tea from the l'algorithme farm. The birthday plate, available for an additional charge, came adorned with a small marigold flower, and we were able to take it home. The wine pairing was quite impressive, significantly enhancing the satisfaction of the meal. It started with Delamotte Blanc de Blancs and included a vintage 2011 aged champagne. The Ezo deer was paired with the highly acclaimed Tuscan wine Siepi 2020, making for a lineup that exceeded expectations. This special anniversary course, available only in September, allows you to enjoy a selection of past popular dishes. While the total can exceed JPY 20,000, I highly recommend opting for the wine pairing to elevate your experience.September Lunch Course: JPY 9,900▷ Algo Tart▷ Grilled Eggplant with Mascarpone and Olive Oil▷ Anago Beignet with Egg Yolk and Beets▷ Grilled Unagi with Berries▷ Hokkaido Ezo Deer with Porcini▷ Rich Egg Caramel Cream▷ Macarons and Herbal Tea from l'algorithme Farm▷ Birthday Plate (additional charge)Wine Pairing: JPY 7,500▷ Delamotte Blanc de Blancs▷ Château Sirio Graves 2019▷ Champagne Royal Coteau Vintage 2011 Blanc de Chardonnay▷ Catherine Marshall Pinot Noir on Sandstone Soils 2025▷ Mazzei Siepi 2020▷ Blandy’s 10 Years Old Bual Madeira (additional)———————————————————————Thank you for reading my review. If you are interested in this restaurant, please bookmark it by clicking the "Save this restaurant" button below! ———————————————————————
