I visited on Saturday at 6 PM, having made a reservation about two months in advance. The location is just a few minutes' walk from the west exit of JR Kamata Station, situated in a residential area that is relatively easy to find even for first-timers. As a renowned sushi restaurant frequented by sushi lovers from all over the country, it was fully booked that day. With high expectations, I took my seat at the counter.After a while, a young chef appeared. The unique feature of this restaurant is its style, where multiple young chefs take turns preparing the sushi, rather than just one head chef. Although they rotate frequently throughout the day, the atmosphere remains calm and composed.What struck me first was their dedication to the rice. The process of mixing freshly cooked rice with vinegar is an entertainment in itself. The rising steam, the aroma of vinegar, and the chefs' meticulous movements naturally draw your attention. They even let you taste the freshly cooked rice right in the palm of your hand, making you feel like the experience begins before the sushi is even completed.The course started with the roe of sea bream, followed by red sea bream, medium fatty tuna, and seared tuna, then moving on to young sardine, gurnard, mud squid, abalone, clam, horse mackerel, bonito, sea urchin, and eel, showcasing seasonal seafood one after another. The highlight for me was the tuna. After showing it to us in a large block, they placed the fish on a plate warmed to body temperature before forming the sushi. When I took a bite, the sweetness and aroma of the fat spread in my mouth, instantly making me understand why this place is so popular.Each piece of sushi came with detailed explanations, allowing me to appreciate the origin and quality of the ingredients. The pairing with Japanese sake was excellent, and I enjoyed it slowly with "Gakki Masamune" that day.After finishing the sushi, I was surprisingly guided to the second floor. There, I enjoyed tea and sweets in a calm sofa seating area, savoring the aftertaste of the meal. The continuation of this special experience until the very end is characteristic of this restaurant.The current omakase course is priced at JPY 8,800, which offers incredible value for the experience provided. Considering the quality of the sushi itself, along with the live atmosphere, presentation, and hospitality, it truly is one of a kind. I can understand why reservations are hard to come by. Securing my next reservation will be the biggest challenge, but this place has definitely made me want to return.It was a great meal.
