During my trip to Nagano, I visited "Soba Kobo Yama no Mi." In short, the soba was at a level that could be considered the best in Japan. I started with the appetizers, and the sobakaki (soba dumplings) were exceptional right from the start, delivering the aroma and sweetness of soba directly to my palate, which raised my expectations significantly. The main soba dish was remarkable in terms of aroma, texture, and smoothness—simple yet unforgettable in taste. Additionally, the soba pizza was impressive. It was a playful dish, but the soba flavor was well-preserved, providing a high level of satisfaction. Even the soba-yu (soba broth) at the end was delicious, creating a complete and cohesive dining experience from start to finish. It's definitely worth the trip, and I highly recommend this renowned restaurant to any soba lover.
