I regularly visit Yamasaki in Nishiazabu. The first dish, eel, was a delightful surprise, served with a refreshing shiso sauce. The next dish, "Mizugai," combined the sound of ice clinking, a cool appearance, and the fresh scent of abalone, creating a truly sensory summer experience! The kudzu noodles wrapped in tomato sauce and caviar had an excellent balance of sweetness and saltiness. The duck was perfectly cooked, and the black garlic sauce complemented it beautifully, with the thickness of the slices being just right—absolutely exquisite. The rice dish featured two types of shrimp, one half-cooked and the other perfectly grilled, infused with the aroma of charcoal. The combination with the Manganji pepper was incredibly delicious. The dessert, a smoked milk ice cream paired with watermelon, was outstanding, as if it belonged to a different dimension compared to regular ice cream and watermelon! Every visit feels like an evolution, impressing me with its flavors, presentation, and aromas. The balance of tastes is daring yet exquisite, achieving a high level of perfection that I truly believe is a divine skill!
