After an 8-month hiatus, I returned to this renowned Japanese restaurant, a Tabelog Silver and one of the top 100 establishments. The theme for this visit was comforting dishes that suit the changing seasons. I truly enjoyed the chef's dedication to each dish.The master chef, a culinary genius, even shaves his own bonito flakes. The taste and aroma are simply unmatched. The broth, made from fully utilizing the ingredients, is exquisite. This meticulous attention to detail is the essence of Sawada—truly one of a kind.The owner, who loves Japanese sake, is practically at a sommelier level. It's fascinating to see how the drinking experience changes with different sake vessels. The selection of sake was as delightful as ever! (laughs)**Menu**- Appetizer: A pre-meal drink infused with iris leaves.**Two Dishes of Vegetarian Cuisine**- Thin pea porridge.- Eating Hokkaido white asparagus with asparagus.- Broth made only with skin, salt, and water.**Simmered Dishes**- Aburame fish with egg and crumbled tofu.- Koshiabura.- Ume paste.- Kinome (young leaves).**Sashimi**- Blanched octopus.- Grilled sake with ume paste.**Carp Dishes**- Carp sashimi and fried carp scales.- Spicy vinegar miso.**May's Hassun**- Tartare-style cherry salmon.- Spring roll skin helmet.- Shiitake mushrooms with Kikaijima sesame.- Cherry salmon.- Water shield and cucumber.- Shiitake, itawara, and snap peas.- Roast beef with fruit tomatoes.- Bamboo shoots with kinome.- Glazed broad beans.- Fried octopus paste.**Grilled Dishes**- Grilled salmon with rice straw and kinome vinegar.**Wonton with Soft-Shelled Turtle**- Soft-shelled turtle and Kishu duck with natural hamaboufu.- The broth was incredible.**Rice Dishes**- Boiled flowers.- Bamboo shoots, bettara pickles, and ume.- Rice with dried shrimp and flower pepper.- Rice with fried sakura shrimp.**Broth Soup Curry with Everything**- Almost all cumin.- I was thrilled to encounter this once-a-year curry.**Tea and Sweets**- Yomogi (mugwort) kinton with lily root paste.- Gyokuro tea.- A perfect ending.I spent a wonderful 3 hours enjoying exquisite food, sake, and ambiance—absolutely magnificent!
