I was captivated by both the heart and the stomach. This place beautifully elevates ingredients from all over Japan, right in Kyoto. While the chef skillfully prepares dishes in front of you, they don’t overdo the presentation. The calm atmosphere and warm hospitality are incredibly pleasant. Each dish could easily be a main course, yet I never felt overwhelmed. The tableware is exquisite, adding to the subtle charm of the dining experience. We started with four types of conger eel, followed by sweetfish. What a wonderful summer feast! The conger eel was served rare, medium-rare, well-done, and blanched. Absolutely fantastic. The sweetfish was grilled to perfection, and I enjoyed eating it from head to tail. While the ingredients were sourced from across the country, they truly shine in Kyoto. The Japanese sake paired with the conger eel and sweetfish was delightful. And of course, the water in Kyoto is exceptional. The aroma of freshly cooked rice and its deliciousness when it hits your palate is simply irresistible. There’s something extraordinary about it. Among all the delicious waters from various regions, I have a fondness for Kyoto’s. I savored so many delightful flavors that I ended up quite full. But it felt so good. I experienced an irresistible charm... Simply the best.
