I believe you'll fall in love with Hiroshima.Of course, this applies to those outside of Hiroshima as well! The dishes made with Hiroshima's water are truly remarkable, thanks to Hirano-san's skill and the ingredients he gathers. While the flavors might be a bit bold for traditional Japanese cuisine, they are never overwhelming or chaotic. Instead, they showcase the best possible performance with these ingredients and combinations. You can enjoy the beauty of deliciousness and the essence of umami in every dish. It’s a happy experience.The restaurant's signboard truly embodies its essence, which is impressive.They also serve wonderful alcoholic beverages. This time, I paired some drinks with my father, but I couldn't help but be tempted by the delicious-looking drinks being served at the neighboring table! If you enjoy alcohol, you'll have an even better time here.- White Sweet Sea Bream - Kaga Lotus Root and Snow Peas - Special Junsai - Okose - Cherry Salmon - Squid - Ojiya - Meat treated by Numamoto-san - Fuki Rice - Simmered Daikon with Spanish Mackerel and Eggplant - Sesame Tofu When I list them out, I wonder if I didn’t eat as much as I thought, but the level of satisfaction is extraordinary. It’s hard to even say what was the best! However, if I had to highlight some standout dishes, they would be: - Cherry Salmon - Ojiya - Fuki Rice - Three accompaniments for Fuki Rice. Fuki Rice. As a child, I didn’t like this at all. I preferred chicken rice! But this Fuki Rice is so overwhelmingly delicious that I’m sure if I had tasted it as a kid, it would have become my favorite dish. Even the kid who was happy just to get a prize from a 10-yen gumball machine would say, "This is so good! I love it!" It’s that delicious.Having grown up in Japan and living within reach of my home prefecture, I can’t help but feel joy that this restaurant exists here. It’s worth the trip to Hiroshima just for this. The only dilemma is feeling awkward about returning to Tokyo without seeing my parents after coming back to Hiroshima! Thank you for the wonderful time and meal. I was able to make my mother happy for Mother’s Day, and my father enjoyed his drink with a smile. I ended up quite tipsy myself! I will definitely visit again. Thank you!
