Kuruma Sushi (Matsuyama)I was completely knocked out by the first two dishes.The first plate featured blue eel, raised on a diet rich in shellfish. The beautifully grilled flesh was bursting with concentrated umami, and I could truly appreciate how its upbringing influenced the flavor.Next was Mr. Fujimoto's conger eel.The texture of the meat, especially near the dorsal fin, was unlike anything I had ever experienced. It had a delightful elasticity combined with a tender quality, and the umami expanded with each bite, leaving me breathless. This was a completely different culinary experience from any conger eel I had eaten before.Enjoying the fish from the Seto Inland Sea, prepared with a focus on the ingredients.Each piece conveyed sincere craftsmanship rather than flashiness.It was a pleasure to see the head chef and the young artisans working in harmony, creating an atmosphere that enhanced the dining experience.This has become a place I want to visit again when I return to Matsuyama.
