I visited the Japanese restaurant "Hassun" in Kyoto. In a refined and tranquil setting, I enjoyed dishes made with seasonal ingredients. As expected from a Japanese cuisine establishment, each dish was beautifully presented, showcasing the seasonal essence and the chef's dedication.The dashi (broth) was particularly outstanding, offering a gentle flavor while still delivering a rich umami taste, allowing me to savor the delicate flavors characteristic of Kyoto. It wasn't flashy, but it left a comforting impression.However, perhaps due to the timing of my visit, I didn't encounter any dishes that left a strong, unforgettable impression. Given my high expectations, I honestly wished for a bit more surprise.Among the dishes, the tempura of carp was particularly memorable. It was a surprising ingredient that I rarely get to eat (laughs). It was a valuable experience, and I appreciated the unique aspects of Japanese cuisine. I believe the menu changes with the seasons, so I would like to visit again at a different time.
