This restaurant is part of a series that includes hard-to-book places like "Suzuda Style," "Jigendo," and "Atami." This time, I visited "Maki Tori Shin Kobe," where you can enjoy yakitori grilled over wood, offering a fresh and unique experience. The exterior might be a bit hard to find at first, but there is a small sign. You can enter by ringing the intercom, giving it a distinctive vibe.As soon as I stepped inside, I was greeted by the enticing aroma of wood smoke. The counter seating allows you to watch the yakitori being grilled right in front of you. The counter has a luxurious wooden finish, and the dim lighting creates a calm atmosphere.【What I Tried】- Thigh- White Liver- Mushroom- Gizzard- Sweet Vinegar Pickled Daikon- Chicken Shumai- Chicken Breast- Calf- Fruit Tomato Kuzu Somen- Toast with Chicken Rillettes- Thigh Meat Soli- Chicken Wing Negima- Red Miso Soup- Chicken Soboro Rice- Shine Muscat Grapes- Fresh Caramel【Overall Impression】The yakitori grilled over wood had a unique twist, and I believe that its rich flavor can only be achieved through this method. Every dish was delicious, with each piece of meat being thick and satisfying. This allowed me to enjoy both the umami of the wood and the meat. Not only the yakitori but also the chicken soboro rice and fresh caramel left a strong impression. The chicken soboro rice was enhanced by the wood smoke, making it incredibly enjoyable. The fresh caramel was served as is, and it was rich with a melting texture. I had never tasted such fresh caramel before.
