Kizan is conveniently located just a short walk from Nihonbashi Mitsukoshi-mae Station.I have visited this place about twice a year since it opened. Chef Kanamori is dedicated to faithfully recreating the essence of Kyo-aji cuisine.As someone who has never tasted dishes from Nishiyama, I feel incredibly fortunate to have this experience.The interior and tableware are also reminiscent of Kyo-aji, providing a time-traveling experience.I’ve heard there are many dishes that have yet to be realized due to sourcing and staffing, so I hope to someday try the Rojin rice and salmon belly rice!
