Located in Hiroshima City, Hiroshima Prefecture, this Japanese restaurant has been selected as one of Japan's top 100 restaurants. It is a supreme washoku (Japanese cuisine) establishment that pursues the essence of "dashi" (broth), using different types and origins depending on the dish. In particular, the Takamori Wagyu strip loin, of which only 10 heads are shipped each month, has a low melting point of 17°C, melting instantly in your mouth. The melted fat spreads throughout your mouth, blending with the dashi, creating a moment of bliss. Even the sashimi, despite its simple preparation, is elevated to an exceptional taste through careful aging and presentation. This restaurant has been on my radar for a while, and I was thrilled to finally visit. I definitely want to come back!
