With a light batter that enhances the natural flavors of the ingredients, the course progresses smoothly, interweaving seafood and vegetables at a good pace. The composition is remarkable, as it allows you to enjoy the meal without feeling the heaviness of the oil, keeping your appetite intact until the end. Unlike the increasingly popular "light-focused" tempura, this course allows you to fully appreciate the umami of each ingredient while leaving a very light aftertaste. ■ Shrimp One of the stars at the beginning of the course.
