This popular restaurant is often fully booked, but I was lucky enough to get a reservation due to a cancellation.To dine here, you need to make a reservation through table check, so it’s best to either aim for the reservation release date or frequently check for cancellations.The specific brand of pork is only revealed on the day, which adds to the excitement.I usually order either the loin or the ribeye, but today, due to the high humidity and temperature draining my energy, I opted for a lighter meal: the tenderloin (140g) and juicy minced cutlet.The pork is Gunma Prefecture's Awa Yuki Pork.First, the minced cutlet arrived, and it was delightful.It was incredibly juicy, so much so that I wanted to say it was "drinkable," and it was delicious even without any sauce.Next came the tenderloin cutlet.The slightly pink cross-section glistened with juices, looking very appetizing.The peppercorns added a nice accent.Again, I felt it was best to enjoy the meat's flavor without any condiments.The rice accompanying the meal was also exceptionally tasty.Overall, I thoroughly enjoyed my time and left the restaurant satisfied.By the way, the chef's uniform has changed from a previous baseball uniform to one resembling a chef's attire.
