(This is a memo from 7 years ago.)As you can see in the photo, the moment the dish was served in front of me, I couldn't help but gasp at its overwhelming visual appeal. On top of the base sushi roll, there is an extravagant mountain of tuna, salmon roe, and golden, glistening sea urchin—truly a dish that can be called a "treasure chest of the sea."I recall that this was a special creation made at my request by the chef at that time, and I'm not sure if it's still on the menu today... but it’s a dish I can't help but talk about.The volume is so generous that it can't possibly fit in one bite, but the moment you take a big bite, the happiness that spreads is indescribable. The rich umami of the creamy tuna, the bursting texture and perfect saltiness of the salmon roe, and the creamy sweetness of the high-quality sea urchin create a perfect harmony in your mouth. The balance of the sushi rice's vinegar is exquisite, bringing together such strong and luxurious ingredients without any clash.The chef's meticulous work visible from across the counter, along with the lively yet relaxed atmosphere, creates a wonderful space where you can enjoy your meal. This restaurant offers a high level of satisfaction in both taste and ambiance. It was a remarkable dining experience that reminded me of the pure joy of eating delicious food, engaging all my senses.Even after many years, the strong impact and undeniable deliciousness remain vivid in my memory. It’s one of those special places I definitely want to revisit someday.
