The moromi (fermented rice) was the key to its taste.Steamed White Sweetfish The sweetfish itself was fluffy and delicious, but it could have used a bit more salt for flavor.Fresh Spring Rolls This was a surprise‼️ Rice paper, perilla leaves, bonito, kelp with roe, garlic shoots, and pineapple, all served with a gochujang-based sauce. I thought these ingredients wouldn’t go together, but surprisingly, they harmonized beautifully. Simply impressive.Softshell Turtle Soup This soup contains mochi-filled pouches, with mochi and softshell turtle meat inside. The broth is exceptionally good.Hamo Katsu Burger The restaurant's original Worcestershire sauce pairs well with the hamo katsu (pike eel cutlet), and the bun is fluffy, reminiscent of a high-end Filet-O-Fish.Junsai, Sea Urchin, and Molokhia Soup A refreshing taste that evokes the early summer season.Shark Fin Green Curry This was also shocking. I thought it was a waste to pair thick shark fin with green curry, but it surprisingly worked well, creating a luxurious seafood green curry.Hokkaido Scallop with White Sesame The vegetables in the white sesame sauce include bitter melon, but they don’t overpower the dish. The breadcrumbs sprinkled on top provide a nice accent.World's Best Chicken Wings These wings need no introduction. They are dried overnight and then grilled over charcoal, resulting in a moist and juicy texture.Clay Pot Rice Young corn and sweet peppers are stir-fried with sansho pepper and sweet-spicy seasoning, served over rice topped with Hida beef prepared in a sukiyaki style, along with an egg yolk. Even the rice alone, before adding the Hida beef, is delicious.Earl Grey Shaved Ice You can choose between matcha and Earl Grey, and I opted for Earl Grey. I was impressed by the fine texture of the ice, giving the sensation of eating cold air. This is the best shaved ice I’ve ever had.
