The balance of fat and seasoning was exceptional, making it the most memorable piece of the meal.Additionally, the spear squid stuffed with sea urchin was incredibly delicious, with the sweetness of the squid perfectly complementing the rich umami of the sea urchin.Since it was a limited offering for May, I decided to add the sweet shrimp and ended up enjoying two pieces, which was a fantastic choice.Rather than flashy presentations, the sushi here focused on the earnest preparation of each piece, allowing me to enjoy the meal comfortably until the very end.
