I visited the renowned yakitori restaurant, Maki Tori Shin Kobe.True to its name, the restaurant features dishes grilled over a wood fire, and the aroma that wafts up as soon as you sit at the counter heightens your anticipation.The first dish I tried was the white liver sashimi from Takasaka chicken, which was surprisingly smooth and rich. It paired wonderfully with the sesame-flavored Goma Presso, capturing my heart from the very first bite.The jumbo mushrooms from Hasegawa Agricultural Products in Shizuoka, generously topped with chicken dashi, were impressively umami-rich. The gizzards from Nagoya Cochin were grilled with fine cuts, allowing for a delightful crunch and a savory aroma.The chicken shumai served in a broth made from bonito and kombu kelp was elegant and comforting. The sweet vinegar pickled Japanese radish served as a refreshing accent.All the skewers were fantastic, but the thigh meat from Hinai chicken stood out, releasing a fragrant aroma from the wood fire, and bursting with chicken flavor with every bite. The harissa paired with the furisode cut and the yuzu pepper with the rare soribobi cut added a fun twist to the flavors, keeping things interesting until the end.The toast grilled over wood, generously spread with chicken breast rillettes, was decadently delicious. The grilled chicken wings with green onions were cooked to perfection, showcasing the ingredients' appeal.To finish, the chicken soboro rice grilled over wood was delicious on its own, with a fragrant wood aroma, but it transformed with the addition of egg yolk, ginger, kanzuri, green onions, and tsukudani of okahijiki, making each bite enjoyable until the last. The chicken dashi red miso soup was also gentle in flavor.The palate cleanser, future corn ice cream, was very sweet, and the dessert included fruit candy and homemade smoked caramel. The entire course, including the final sip of Dongfang Meiren tea, flowed beautifully and was of high quality.This place offers the charm of wood-fired cuisine that transcends the boundaries of yakitori. I definitely want to visit again.
