I visited a newly opened Japanese restaurant in Kanazawa, **Kisanuki**.The head chef trained at **Kataori**, the top-rated restaurant on Tabelog in Kanazawa. I was already excited to go, thanks to my friends' glowing reviews.The interior is simple and clean, exuding a sophisticated atmosphere. We were welcomed with hot, fluffy oshibori!Every dish was delicious, but I’d like to highlight a few that left a lasting impression.The sweetfish sushi featured warm, tender sweetfish paired with perfectly seasoned rice, creating a high-quality dish. The sashimi squid was expertly sliced, showcasing its tenderness and rich sweetness. The simmered octopus had a wonderful aroma and a pleasant texture, with flavors intensifying with each bite. The eggplant stood out for its sweetness, melting in the mouth like a drink.The menu included rice, tempura rice bowls, grilled rice bowls, egg rice, and ume chazuke. The ume chazuke, with its unique addition of plum to the dashi, was particularly intriguing. Overall, I felt completely satisfied without any sense of fatigue from eating.It was a great meal!
