This was my sixth visit to Yoda. This time, the featured pork is "Hoso-ya no Maru Buta." What arrived was a beautifully white and fluffy breaded tenderloin cutlet, characteristic of Yoda. When I broke the white crust with my chopsticks, a stunning pink cross-section was revealed, taking my breath away. One bite in, I was immediately struck by its incredible tenderness. The tenderloin, cooked slowly at a low temperature, had no sinew at all, and the texture was so fine and smooth that it felt like I was eating a meat mousse. The pure and gentle umami flavor unique to "Hoso-ya no Maru Buta" burst forth with every bite, while the sweetness of the fat was subtle and clean. The rich flavor of the tenderloin harmonized perfectly with the fragrant, fluffy crust. At first, I enjoyed its pure sweetness with salt, and then I added a touch of mustard to savor a refined, adult flavor. Every time I visit, I am in awe of the perfect cooking technique and the craftsmanship that brings out the unique qualities of the meat to the fullest. Once again, it was an experience of pure bliss. It was a great meal. I will definitely be back.
