In late March, I visited "Kamakura Kitajima" for the first time, where Chef Kitajima, also from Wakuden, showcases his culinary skills. Despite being from the same school, this restaurant's approach to local ingredients from Kamakura and Shonan is strikingly fresh and innovative.What left a lasting impression were the two types of fish I tried for the first time. The "Grilled Large-Scale Rockfish with Sansho" featured a wonderful contrast in texture between two types of bamboo shoots: Matake and those from the Miura Peninsula. The finale, "Cod with Simmered Eggs over Rice," combined the delicate umami of the white fish with fluffy eggs, creating a delightful first-time experience.Additionally, the sashimi from a 4kg grouper was expertly seasoned with salt to enhance its contours, while soy sauce added a lingering finish. The tempura of octopus from Sajima was perfectly cooked, and I was pleasantly surprised by the playful twist of pork in the "Kashiwa Mochi."The highlight was the five types of signature rice dishes. From the mackerel sushi to the rice cooked with sea bream and ginger, and even whale ramen, each dish was crafted with meticulous care.
