Hatsunezushi, a sushi restaurant located about a 5-7 minute walk from Kamata Station, has a history of over 130 years as a traditional Edomae sushi establishment. It has been recognized as one of the top 100 sushi restaurants in Tokyo from 2021 to 2025, as well as receiving Tabelog Silver and Bronze awards from 2017 to 2026.The head chef is currently working overseas, leaving this location in the hands of his apprentices. This allows them to keep the course prices reasonable, making it an accessible choice for diners.Here’s the menu we enjoyed:-----------------------------◾️ Sea Bream Roe and Winter Melon We started with a gentle dish of simmered sea bream roe and winter melon, perfectly stimulating our appetites before the sushi.◾️ Lean Tuna The second dish featured lean tuna sushi, cut to an ideal thickness to provide a satisfying crunch, seasoned simply with salt.◾️ Medium Fatty Tuna This medium fatty tuna sushi had a sweet richness while still showcasing the umami of the lean meat. The warm red vinegar rice, steamed in a kamado, was designed to melt the fat beautifully.◾️ Toro-Taku A combination of lean tuna, medium fatty tuna, and smoked daikon, this toro-taku sushi was impressive with its sweet tuna flavor and the distinct aroma of the smoked daikon.◾️ Young Gizzard Shad This young gizzard shad had been aged for about a week to dissolve the small bones and enhance its flavor. By presenting the flesh on the outside, they made it easier to appreciate the depth of flavor from the aging process.◾️ Squid Thick slices of squid were carefully prepared with knife cuts on both sides.
