Finally made it to Kabuto!!!✨This incredibly popular restaurant is hard to get a reservation at, but this time I was taken by a regular customer, fulfilling my long-held wish for my first visit. I was excited even before entering, as I had been curious about this place for a long time.The grilled eel prepared right in front of me had unique characteristics in each part, allowing me to enjoy different flavors. I even got to try parts of the eel that I usually don’t have the chance to eat, fully experiencing the depth of eel cuisine.What was even more fascinating was the discussion about the differences between wild and farmed eel. I had the rare opportunity to smell the aroma from the cut surface of the head after it was removed. Indeed, there was a noticeable difference in scent, which made me appreciate the complexity of the eel world that I usually take for granted.As I enjoyed the delicious eel and drinks, I found myself quite tipsy before I knew it (laughs). I believe the charm of this place lies not only in the food but also in the conversations with the owner and the lively atmosphere.It's no wonder this restaurant is so hard to book. Although it’s not easy to visit, I would love to come back if I get the chance. It was an unforgettable night for eel lovers!✨
