During my recent business trip to Ehime, I had another purpose: to enjoy sushi at Kuruma Sushi.I was fortunate enough to secure a reservation when my trip to Ehime was confirmed, and I was looking forward to dining at what is said to be the number one sushi restaurant in Ehime Prefecture.While enjoying a beer, I started with some appetizers. The quality of these appetizers was astonishing, delivering an incredible taste that took me by surprise.Each dish that followed was meticulously crafted, bringing out the flavors of the fish to their utmost potential.From the fish itself to the temperature and the knife work, everything was executed to perfection. It truly deserves to be called the ultimate seeker of culinary excellence.I would gladly travel to Matsuyama just to enjoy the sushi here. I plan to try making another reservation in a different season.
