I made a reservation through Pocket Concierge and visited the restaurant. While it can be relatively difficult to secure a reservation, I found that the Shibata main branch is still more accessible compared to the Niigata location.It’s about a 10-minute walk from Shibata Station, and there’s a long arcade and shopping street along the way. However, most shops were closed by the evening...At Tokiwa Sushi, you can enjoy dishes primarily made with local ingredients from Niigata, including not only seafood but also unique vegetable dishes and sushi. On this day, I had rolls with young corn and anago (conger eel) that included vegetables, and the "kaki no moto" (edible chrysanthemum) was exceptionally delicious.The sushi and a la carte dishes were crafted with great care, each one showcasing a thoughtful touch, resulting in a perfect balance of traditional and innovative flavors. Everything was incredibly tasty.The atmosphere of the restaurant was relaxed yet not too casual, and the chef was very friendly, creating a wonderful ambiance.
