I registered for cancellation notifications through AMEX's Pocket Concierge (KIWAMI Dining) and was fortunate enough to secure a reservation from a cancellation waitlist. It seems that getting a reservation can be quite challenging.The owner trained at a restaurant called Shinohara before opening this place. He prepares the dishes while the female manager serves the drinks. Both the owner and the manager have a friendly demeanor, creating a relaxed atmosphere to enjoy the food and drinks.The cuisine focuses on utilizing the essence of dashi and seasonal ingredients rather than extravagant materials. To avoid overwhelming flavors, they use minimal sugar and mirin, allowing the natural deliciousness of the ingredients to shine through.The kaiseki meal is very gentle and the carp sashimi was free of any unpleasant odor. It was delicious when paired with a vinegar miso that highlighted the subtle sweetness of the rice, which contains no added sugar.The final dish, curry, was a bit of a twist, but it was well-spiced and tasty. The fluffy egg over rice with baby sardines was also delightful.The meal included:- Bean porridge- A dish featuring asparagus- A soup with oilfish- Sliced octopus sashimi- Carp sashimi- Hassun (seasonal appetizer platter)- Grilled young sea bream (Uoze)- Wonton with soft-shelled turtle- White rice, baby sardine rice, curry, and egg over rice- Red miso soup and pickles- Japanese sweets and tea.
