Finally made it to Kotan! The appetizers were incredibly high quality, and I was already feeling very satisfied at this point. The chawanmushi (savory egg custard) made with edamame and the tempura of abalone were absolutely delicious. The sushi had larger rice balls, and every piece was great. The highlights were the sea bream and the bonito brushed with charcoal oil. I was reminded once again how delicious Fukumi sake is. Even though it was my first visit and I was alone, I had a lovely conversation with the owner, who left a great impression with their warm personality.
