Located just a 5-minute walk from Maruyama Park Station, I visited "Sushi Sohei" at 1F Ebisu Building, 28-1-10 Minami 2-jo Nishi, Chuo-ku, Sapporo.Sushi Sohei opened in July 2022 and has established itself as a popular sushi restaurant in Sapporo. This was my first visit since its opening four years ago.The owner, Shohei Matsukura, is a globally experienced sushi chef who has trained at various sushi establishments in Tokyo and Hawaii.While I expected a mix of appetizers and nigiri due to its lineage from sushi masters, the meal was beautifully structured with appetizers in the first half and nigiri in the second half.For the nigiri, both white and red rice were used depending on the topping.
