Finally made it to L'evo! I was lucky to get a reservation and stayed overnight.For guests, a shuttle service can be reserved (JPY 6000).After reading various reviews, I thought it would be wise to include the shuttle, and I was right.There were some areas that felt like an avalanche, and driving could be quite challenging if you're not used to it.For dinner, I opted for the alcohol pairing!The ingredients, as well as the dishes, were all locally sourced and beautifully presented, enhancing the overall dining experience.Every dish was something I had never tasted before, and it was incredibly delicious (sorry for my limited vocabulary).What stood out to me were:- L'evo Chicken (the pairing with beer was amazing!)- Daimon Somen- Water Octopus (it looked like a giant bug, with a unique texture)- Tsuki no Wa KumaThe portions were quite generous, and with various alcoholic beverages served, I ended up feeling very full and a bit tipsy!At the end, the chef came to see us off and even took photos with us.It was a wonderful overnight experience.The breakfast the next morning was also fantastic, especially the bear miso soup and tsukudani!
