"Experience the Mid-Autumn Moon through Cuisine at Kashiwaya Osaka Senriyama"I visited Kashiwaya Osaka Senriyama. The theme of the day's menu was "Mid-Autumn Moon."From the very first dish, I was intrigued. It featured Hishi crab, edamame, and a puree of carrot and pine nuts. Each ingredient was delicious on its own, but when combined, they created a completely different flavor. From the first plate, I thought,"Ah, so this is how flavors are crafted."As the meal progressed, seasonal autumn ingredients like chestnuts, adzuki beans, walnuts, ginkgo nuts, matsutake mushrooms, and pears gradually appeared. However, it wasn't just about using autumn ingredients. The dishes, their presentation, and even the artwork and objects displayed in the room all connected to the story of "the moon" and "autumn."One particularly striking piece was a painting of Hotei (the god of happiness) and a boy. When the boy said, "I want the moon," Hotei reflected the moon in a basin of water and offered it to him. That was the story behind the artwork. And then came the final dessert. The dark outer layer represented the night’s surface, while the yellow filling was made from egg yolk. When broken, the moon emerged from within. This connected back to the earlier story.I thought, "How fascinating!"This is what makes it truly interesting. The flavors are incredibly delicate.Even though seasonings are used, the outlines of soy sauce, salt, and sweetness are hardly noticeable.Yet, the umami is remarkably strong. It feels like the taste is crafted from the combination of ingredients, dashi, temperature, and texture. It’s not flashy, but it’s powerful. With just one bite, you can immediately tell this is top-notch work. The hospitality of the staff was also exceptional, and as I listened to the explanations of each dish, they became even more intriguing. When I think of three-star restaurants, I usually imagine "incredibly delicious places," but Kashiwaya is more than that.It transforms the seasons into cuisine and serves them as a story. This time, it was the Mid-Autumn Moon.I wonder what spring will be like. What about summer? And winter? When I finished eating, I thought,"I want to come back for the other seasons."What a delightful experience!
