I visited Tonkatsu Narikura in Minami-Asagaya for my sixth regular check-up. Every time I come here, the experience deepens, and this time the course structure and pricing have been updated, enhancing its quality as a "Tonkatsu Kaiseki".The restaurant's signature dish, the "Shabuturian" wrapped in a snow-white batter, is a must-try.For the first bite, I enjoyed it plain. The astonishing tenderness made it easy to bite into, and then a burst of juicy flavor flowed out like a precious gem.Especially the "Tokyo X" variety has an incredibly low melting point of fat, creating an explosion of sweetness on the tongue. It truly redefines the "grading of pork".The seafood served in the middle of the course was also exceptional. The light, crispy batter gently enveloped the rich creaminess of the oyster and the plumpness of the horse mackerel. Here, I generously added tartar sauce without hesitation.Then, the sweet potato at the end was a delightful surprise. Cooked slowly, it brought out a sticky sweetness that could easily be mistaken for a high-quality Japanese dessert. A sprinkle of salt accentuated its sweetness even more.Finally, I reset my palate with yuzu sorbet, providing a perfect conclusion to the meal.Of course, I also secured a "Shabuturian Katsu Sandwich" to enjoy the next morning.Through the act of frying, the moisture and umami of the ingredients are sealed in. I thoroughly enjoyed the essence of the "low-temperature frying" that Narikura advocates.
