The meat is tender, and the coating is crispy and light. However, I don't think it stands out particularly compared to other tonkatsu restaurants. The chef comes from a French cuisine background and uses low-temperature frying techniques, but this method isn't particularly advanced in French cooking.At JPY 9900 per person, while it is delicious, this price for a set meal is extremely high. The cost is 3 to 4 times that of a typical tonkatsu restaurant, but the taste and special experience do not reach that level of value. I guess you really have to try it yourself to understand.Additionally, the salt and wasabi provided by the restaurant are very minimal, which is quite insufficient. They also request that you use the salad dressing sparingly. Given the price, this is a bit disappointing.
